Greening Serviceware

Creating a sustainable food service program at your hospital includes not only considering the food you purchase but also the environment in which it is served. Disposable food serviceware–plates, bowls, cups, cutlery, clamshells and other products–is widely used in hospitals. Disposable products provide some ben­efits to hospitals—ease of use, minimal maintenance and reduced dishwashing needs. Yet, most of these single-use items end up in landfills, incinerators, or the world’s oceans where they can cause significant harm to humans and the environment.

There are several ways hospitals can improve the sustainability of their serviceware. Reusable options are an excellent best choice if feasible. Bio-based serviceware also has the potential to divert waste from landfills and offer increased opportunities for waste reduction through composting.

It is important to choose bio-based food serviceware carefully as not all options available in the marketplace are truly compostable. Use the guide in the Key Resources section to assist your hospital in making the best decision for the facility.
